Fresh Friday

Friday we had a pretty interesting grilled dinner.

Ingredients:
  • yellow squash
  • zucchini
  • portobello mushrooms
  • red peppers
  • marinade (Lawry's Herb and Garlic)

I was off work so I chopped everything that morning and put them in baggies, poured in the marinade, shaked, shaked, and refrigerate (hehe).


You only really have to marinate for 30 mins, but I left them in all day. Ike came home and fired up the manstove.

Dinner was ready in about 15 mins. I also fry panned sweet corn to add to our healthy little dinner.

It sounds great right? Well there was a slight mishap with the first batch. It ended up tasting just like lighter fluid (blech). The second batch was yummy though. :-)

I'm glad that we are making an effort to plan healthy meals together.
